The Poppler packages for both Ubuntu 16.04 (current LTS, supposed to be maintained until 2020) as well as Ubuntu 16.08 would both need updating.

I would volunteer to help, but I could use some guidance.

That's an Ubuntu thing, contact them on their bug tracker.
