Please try current xf86-video-ati CVS (plus possibly DRM CVS if you enable the DRI); there have been fixes that solved similar problems for a lot of people. I tried CVS builds as you said, but they didn't solve the problem. I managed to find a workaround, though: the server doesn't crash if GLcore, glx and dri are disabled in xorg.conf. Sounds like a duplicate of bug 4847 or another 'R300 card hangs with DRI enabled' bug then.
