"I just made a pdf with pdflatex including a colored png image. When opening the
pdf with evince, it sometimes appears just in black and white. When i zoom in
our out the image is shown correctly.

The strange thing is that most of the time the image is shown correctly.
Sometimes you have to zoom a lot in and out to reproduce it.

I too have this problem with png images in pdfs.  Its random and sometimes can 
go away by changeing the zoom size when view the pdf.  I'm using kpdf with 
poppler 0.5.3 on a Gentoo box running KDE 3.5.4.

Works for me on current poppler
