I tried two examples from http://live.gnome.org/Evince/Forms, forms-scribus.pdf and pcpurchase.pdf. In both the text is only visible when the form is being edited, with forms-scribus.pdf the outline of the forms isn't even visible so it's hard to know they're even there.

Everything seems to work fine if I fall back to 0.8.4, I haven't tried 0.8.5 yet as it isn't available in Debian.

Yeah right, regression, sorry, i'll be releasing 0.8.7 very shortly to address this issue.
