When I used LibreOffice under Windows 7, you could choose which particular program you wanted to use through the start menu - plus the main program. Under Mac OS X, you can only use the main program and choose your program there. For an improvement idea, in the next update, could you try to put all the separate programs in a folder, like Microsoft Office for Mac 2011? This would make it easier to use LibreOffice. Thanks.

Can not confirm on own master build osx 10.10.1
Tested printing a4 letter default page style portrait - printed in portrait mode as expected
Two different printers : Samsung CLX 3170 and Kyocera FS C5150

This has been asked for before - it will probably never happen, all of the modules use the same basic instantiation, separating out the code would be very arduous, which is why they come in one single app bundle.

You can in theory create separate launchers for each module anyway from the command line, or maybe with Applescript - this is an exercise left to the user.
