When an output is transformed (I tested it with drm a. fbdev backends) the touchscreen isn't rotated too.

With weston-simple-touch I see the touch is recognized but at different location then where I did touch.

As far as I know, this is now properly supported by the new touchscreen calibrator included with Weston 5.0.0.
