The problem occurred in PulseAudio 8.0, running an Arch Linux up to date.
This is a regression since PulseAudio 7.1

The problem:
 * Boot the PC with only the headphones connected: The audio is working, the default analog output is used.
 * The headphones are unplugged: PulseAudio does the automatic routing to the digital output, which is fine and expected since PulseAudio 8.0
 * The headphones are plugged back: PulseAudio keep the digital output and does not switch to the previous default analog output

This a very annoying problem, since the headphones can be accidentally unplugged  a little bit (the PC receive the event: unplug then plug in)
I have to launch pavucontrol to select the right analog output
